Deep Crimson color, with a nose that is well-opened and focused on the cherry and blackberry, with toasted notes of wood and spice and a touch of mint. The attack is immediate with velvety soft tannins on the palate, pleasant fruit nuances of cassis and a great finesse in the finish.
The 120 hectare estate, practices sustainable viticulture for the past 30 years, in the Appellation of Corbières, on the hills of Boutenac. The low, stony, pine-strewn hills face the heat of the sun, tempered strong, healthy winds from the northwest, and the wet wind from the sea. The climate is typically Mediterranean with a dry and hot summer. Rains are rare and unpredictable. The soil is a mix of pebbled earth, poor in organic matter but of great mineralogical diversity which aids in the aromatic complexity of the wines.
Hand harvested. The wines are selected after fermentation, blended, then aged for 12 months in 600L demi-muids casks of 1-3 years old.
Serve with red meat in stews, roasts or grilled, game, and strong cheeses or with traditional Mediterranean cuisine.
Drink or hold for 5-8 years. Best decanted before serving. Serve at 60-63°F.
