Expressive, spicy and vanilla nose with caramel notes. The palate has a concentrated cherry presence with licorice and spicy notes. It is structured with good tannins yet silky and delicate, enhanced in the finish by long and warm notes of blond tobacco.
The vineyard stretches over 35 hectares, of which 21 are AOC Minervois classified. The soil structure is diverse, comprising rolled pebbles, sandstone and limestone. On the stony soils where water is in short supply, the rocks are first crushed before the vine can be planted. The climate is characteristic of the Mediterranean, very dry and benefiting from exceptional sunshine.
Traditional methods, de-stemming and carbonic maceration of the Carignan. 50% aged in barrels and 50% in tanks. Barrel aged for 8 - 10 months for a total of 15 months.
Delicious with cassoulet, roasted fowl, duck confit, stews and roasted or grilled beef.
