Vinification |
When the aromatic maturity is reached, grapes are hand-harvested in crates with a maximum of 15kg. Immediately undergoing soft pressing, then fermentation in temperature controlled tanks. Once complete, further refinement continues for two months until secondary fermentation using the Charmat method. |
Pairing |
A fuller bodied Prosecco that is enjoyed as an aperitif, yet pairs beautifully with white meat dishes, curries and Southeast Asian cuisine and cream and fruit desserts. |

The Ardenghi vineyards plunge their roots into well-structured clay soils of the luxuriant sloping terrain in the Conegliano Valdobbiadene region of Treviso. From these sustainably cultivated hillsides, Lorenzo Bormioli and Mattia Ardenghi skillfully produce Prosecco with fine effervescence and vibrant flavour representing a terroir that has always been dedicated to attentive care of vines, and respect for long-established tradition.
Eco-sustainability includes use of bio-diesel tractors, solar powered and geothermal water systems for production facilities and offices. Ardenghi is also currently working towards Fair Trade certification, as all workers are employed by the company on a full time basis and not just seasonally. In addition, all new Glera plantings are organic.
