When the aromatic maturity is reached, grapes are hand-harvested in crates with a maximum of 15kg. Immediately undergoing soft pressing, then fermentation in temperature controlled tanks. Once complete, further refinement continues for two months until secondary fermentation using the Charmat method.
A fuller bodied Prosecco that is enjoyed as an aperitif, yet pairs beautifully with white meat dishes, curries and Southeast Asian cuisine and cream and fruit desserts.
Serve chilled at 39-43˚F in a tulip or flute glass.
