When the aromatic maturity is reached, grapes are hand-harvested in crates with a maximum of 15kg. Immediately undergoing soft pressing, then fermentation in temperature controlled tanks. Once complete, further refinement continues for two months until secondary fermentation using the Charmat method.
Pairs well as an aperitif, yet goes with the entire meal, particularly with antipasti, white meat and fish courses and can even accompany desserts like panettoni and fruit tarts.
Serve chilled at 39-43˚F in a tulip or flute glass.
