Full bodied, round with soft tannins and balanced acidity. Rich and fresh with an intense and complex aroma dominated by small red fruits accompanied by cherry and plum. There are delicate shades of tobacco and coffee with vanilla and cocoa notes with an enveloping palate and lingering finish.
The grapes arrive in the cellar and are immediately pressed with a horizontal press. The pressed juice is sent to maceration in controlled temperature tanks for ten days. The evolution of tannins and total acidity is constantly monitored. After careful tasting, it is bottled and put to rest for a period of about five months before being sold.
Excellent with robust pasta dishes, red meats and wild game. Ideal with ripe cheeses.
