Vinification |
The hand-harvested grapes are pressed and de-stemmed so that fermentation on the skins can begin. Numerous coloring and polyphenolic components are extracted through this process. Once the fermentation has come to an end, the wine is aged in 500-liter oak tonneaux for a duration of 12 months. |
