Our red Lirac offers floral and spicy bouquet of garrigue on a backbone of black cherry and plum fruit. It is powerful, medium to full-bodied with firm tannins and a lingering fruit finish.
Certified Organic vineyard of 40 hectares consisting of hillsides of sand, clay and rolled pebbles. The average age of the vines is approximately 30 years. Working both goblet vines of over 40 years and recent plantations established with double cordons. Chemical free, the defense of the vineyards is based on natural products and human intervention. Ground cover between rows resists erosion and prevents overconsumption of water by the vines. Grapes are hand-harvested at optimum maturity.
Starting with a cold maceration of about 48 hours to extract the best of all its aromatic qualities. Alcoholic fermentation begins and is extended to last a total of one month. Minimum pumping over and gentle extraction efforts employed. Élevage in cement tank for 12 months before bottling.
Pairs perfectly with the spirit of contemporary cuisine: roasted chicken, beef tartare or carpaccio, grilled meats, game, and lamb.
To appreciate the best qualities of this Lirac, it is recommended to serve between 60° and 65 °F. Well-structured, it will mature nicely. Drinks well now through 2025.
