Beautiful deep red color. Intense bouquet of spices, cassis and truffles. On the palate are flavors of black currant, blackberry, licorice, pepper, with nice length supported by fine tannins.
The 120 hectare estate, practices sustainable viticulture for the past 30 years, in the Appellation of Corbières, on the hills of Boutenac. The low, stony, pine-strewn hills face the heat of the sun, tempered strong, healthy winds from the northwest, and the wet wind from the sea. The climate is typically Mediterranean with a dry and hot summer. Rains are rare and unpredictable. The soil is a mix of pebbled earth, poor in organic matter but of great mineralogical diversity which aids in the aromatic complexity of the wines.
Harvested at maturity, de-stemmed while keeping the maximum of whole berries, then fermented in vats for 6-9 days. Malolactic fermentation after racking. The grapes are vinified separately before final assemblage.
Pairs well with grilled meat, stews, cassoulet, stuffed vegetables, ratatouille and cheeses.
