|Sauvignon Blanc 100%|
Bright yellow with light green tints with aromas of white flowers, citrus and pear. Classical expression from Sancerre that is generous and mineral driven with a persistent and tangy finish.
Located in the village of Bué the vines of this 12 hectare estate are mostly growing on limestone, known as the famous “Terre Blanche” of Bué. A strict disbudding occurs during the spring that allows a homogenous allocation of vegetation and grapes per vine.
Strict sorting after the harvest to keep the best matured grapes. One month of fermentation at thermo-regulated temperatures and aging on lees. Then bottling at the property from spring to summer.
Appetizers, oysters, fish and of course goat cheese.
