Deep red in color with a generous and complex bouquet marked by peppery, spicy and dark chocolate notes. Medium bodied and silky on the palate with a generously tangy substructure in the refined yet lingering finish.
The 120 hectare estate, practices sustainable viticulture for the past 30 years, in the Appellation of Corbières, on the hills of Boutenac. The low, stony, pine-strewn hills face the heat of the sun, tempered strong, healthy winds from the northwest, and the wet wind from the sea. The climate is typically Mediterranean with a dry and hot summer. Rains are rare and unpredictable. The soil is a mix of pebbled earth, poor in organic matter but of great mineralogical diversity which aids in the aromatic complexity of the wines.
Harvested at maturity, de-stemmed while keeping the maximum of whole berries, then fermented in vats for 7-9 days. Malolactic fermentation after racking. Parcel selection.
