Pays D'Oc

The 120 hectare estate, practices sustainable viticulture for the past 30 years, in the Appellation of Corbières, on the hills of Boutenac. The low, stony, pine-strewn hills face the heat of the sun, tempered strong, healthy winds from the northwest, and the wet wind from the sea. The climate is typically Mediterranean with a dry and hot summer. Rains are rare and unpredictable. The soil is a mix of pebbled earth, poor in organic matter but of great mineralogical diversity which aids in the aromatic complexity of the wines.

Harvested at maturity, de-stemmed while keeping the maximum of whole berries, then fermented in vats for 7-9 days. Malolactic fermentation after racking. Parcel selection.

Grilled or roasted meats or game, Mediterranean accompaniments like garlic, olives and tomatoes,  comté as well as soft earthy cheeses.

Drink within 2 years. Serve with slight chill at 58-61°.
