Crushed stone aromas accent peach and herbal notes. Fruity and rich, with finesse and length exhibited in this classic medium bodied rosé.
Certified Organic vineyard of 40 hectares consisting of hillsides of sand, clay and rolled pebbles. The average age of the vines is approximately 30 years. Working both goblet vines of over 40 years and recent plantations established with double cordons. Chemical free, the defense of the vineyards is based on natural products and human intervention. Ground cover between rows resists erosion and prevents overconsumption of water by the vines. Grapes are hand-harvested at optimum maturity.
Our Tavel is hand-harvested, and selected. Undergoes brief maceration in stainless steel tanks for about 12 hours. Free run juice and press juice are then blended together. The fermentation takes place at low temperature (13° to 18°C). The different grape varieties are vinified separately with the greatest care, each one contributing its own individual characteristics.
Combines the advantages of a white wine and those of a red, this Tavel pairs with a diverse range of food. Our Tavel matches with white meat, fresh young cheeses, Provençal dishes, curries and Asian cuisine, BBQ and grilled meats.
Drinks well now through 2019. Serve between 52° and 60°F.
